You will need a medium size pack of lil smokies. 24-28oz
I'm cooling the brine before I add to smokies, dont want much fat in the brine.

Recipe......yeah real Penrose.

1/2 cup water
2 cups vinegar
1/2 tbs cayenne
1 tbs red pepper flake
1 tbs minced onion, dried
1 tsp minced garlic
1 tsp paprika
1 tbs salt
pinch of allspice

Bring brine to a broil, reduce heat, cover and simmer for 5 mins. Dont pack the smokies in the jar. Pour brine over smokies...I opted to cool the brine first. Put lid on jar and put in fridge. Good in couple days, better in 7 days.

Does the Lil smokies pull/suck the brine into them? Or do you have/need to poke holes with a tooth pick in the Lil smokies?

Got bored on a rainy day . Followed as listed above , but had to add some ginger and caraway seeds . Used Eckrich smoked sausage .
I'll tell ya , that hot brine would be a great dip for fried chicken .
I also used the jar vac on them .

Good time to bring up these threads.
Brought my neighbors some of the summer sausage I made last weekend at the gathering. He treated me with a semi homemade pickled kielbasa sausage. The kielbasa is purchased (don't remember the brand) but sure was great washed down with a beer. Right up there with a pickled turkey gizzard.
 
I got a question for you professionals. How could you smoke the little smokies before pickling them? Is there a way you would do it?

Not a pro in the least.
The little smokies have been treated with liquid smoke. I have never tried smoking them. I believe they are a cured product so could be cold smoked safely.

Thanks. I thought they might be cured & you could cold smoke them. But I was unsure.

I was just thinking I could add a more pronounced smoke taste to them.
