Pastrami Rub ????

    Going to do a corned beef tomorrow for pastrami. It has been soaking for 24 hours to reduce the saltiness. It will be going into the smoker about 9 hours from now. What shoud I rub it with?

    This what i use, or any rub you likr will work
    1/3 cup pepper * 1/3 cup juniper berries
    1/4 cup coriander

    Juniper berries.......I never thought of them with pastrami.I usually only use them with game and jerky.I'm going to try it on my next one.

    2 Tablespoon Coriander
    2 Tablespoon Paprika
    2 teaspoon Black Pepper
