Ever since Steve H Steve H posted about this sorcery that magically turns corned beef into pastrami I just had to give it a try. There were more beef ribs to smoke so I decided to do both.

The ribs were done in about 4 hours but the little corned beef well, lets just agree with fxsales1959 fxsales1959 that the smallest one can take forever. I didn't even start until 3pm. 12 hours and a few beers later the pastrami was finally done. It is basically the same as smoking a brisket but I didn't think about it ahead of time.

The pastrami. This is only half of it on the plate for display.

Appears your magic worked West Coast Chris. Those vittles look mighty fine.

Point for sure

If you own a pressure cooker or pressure canner you can smoke the corned beef for 3 or 4 hours until it gets some good color, then finish it in the pressure cooker. Times will vary with the pressure you choose, and the thickness of the meat. I usually go 40 minutes at 13# with natural release, and if it's not tender enough I[ll go another 5 minutes.

It would definitely save on wood. This large smoker sure uses a lot of it.
