posted about this sorcery that magically turns corned beef into pastrami I just had to give it a try. There were more beef ribs to smoke so I decided to do both.
The ribs were done in about 4 hours but the little corned beef well, lets just agree with fxsales1959 that the smallest one can take forever. I didn't even start until 3pm. 12 hours and a few beers later the pastrami was finally done. It is basically the same as smoking a brisket but I didn't think about it ahead of time.
