I found this recipe for pork. I used it on a pork butt and it turned out excellent.

1 cup fresh squeezed orange juice
2 tablespoons soy sauce
1 tablespoon chili powder
1/4 cup EVOO
1 teaspoon thyme
Black pepper to taste

I let it marinate for two days. After the first 24 hours I turned over the roast. I then smoked it with apple and a tuch of hickory. My family loved it.

Citris fruits go great on smoked food. Orange and limes are great to smoke with and lemons are great for the finshing sauce. is reader supported and as an Amazon Associate, we may earn commissions from qualifying purchases.
