nuts and bolts, zinc or stainless?

i know not galvanized for sure, but for the coal basket and grate support bolts is zinc ok or do i have to use stainless steal?
 
You're fine with zinc plated bolts.

Zinc will melt at 788 degrees F. and will boil(turn to gas) at 1652 degrees F.

If your smoker is running those temps then you have other issues, and zinc plated/galvanized bolts are the least of your worries!
