  1. Hello from south dakota.I live in the ne part of the state.Also known as pheasant country.Im retired and proud of it.Ive been smoking meat for approx 5 yrs. my 2 favorites are beef brisket and country styl ribs. I just recently returned from a summer in alaska and now im learning to smoke salmon.The worst part of it is that i have to keep sampleing.My belt is getting a little tight.But im learning.
    Im hopeing to learn a few things as im a relative newbie to smokeing and cooking meat. I use a gas fired smoker and normally smoke,cook at approx 165 degrees. my 2 favorite meats so far are brisket and pork shoulder.Smoked salmon is comeing up fast though. I also want to try makeing my own bacon from pork bellies and canadian bacon.I visited the site a couple of times in may and this is the 1st time ive been able to get back and start to check it out. but enough for now. hello to all and good night.[​IMG][​IMG]

    Welcome to the site, sounds like you have done a fair amount of smoking so far.
    If you can bump up the temp on your smoker and give about 225 a try as your temp, will finish the meat sooner and limit the time you sit in the danger zone.

    Welcome to SMF glad you decided to join us. You'll find lots of good info and some great recipes here. Are you actually smoking at 165 smoker temp if so this isn't very safe as it allows the meat to stay in the danger zone far to long and also what internal temps are you taking the meat to if the smoker is only at 165?

    Welcome to SMF and I also hope that your saying you take the meat to a internal temp of 165 because the USDA recommends that your chamber temp should be over 200.

    Welcome to SMF.... Last time I was in South Dakota, there was good pheasant hunting by Sioux Falls. If I am right, you might be lucky enough to have a local BBQ shop where you can get supplies

You'll like it here cause there are abunch of good folks here that would just love to help you out with just about anything to do with smoking. We really like to have newbies here because they can bring in a new propective to how things are done. There's nothing like a new set of eyes to give and new way to make things that little differant to make things alittle better.     It's also free and it will give you the basics of smoking. So after all of that you just need to go grab something to smoke and if you have any question just post them here and we will answer it quickly so you don't have any mishaps with your smoke.
