Hey guys. After about 6 months of reading all of your posts, I've finally gotten around to registering a profile.

My wife surprised me with a Char-Griller Smokin' Pro for V-day this year, and I've really been getting into it. In fact, I smoked a bristket the first weekend I had it, despite the snow on the ground! What an 'interesting' experience. Since then, I've made some of the suggested mods for the model, and things are going smoothly.

Anyway, my dad had a Brinkman offset smoker when I was growing up, and so I've always wanted to get into the game. I look forward to hearing all your advice and hopefully offering a fresh perspective on things.

Welcome aboard, Andy! What took you soooooo long!?!?!? LOL!!!

As you already know, you'll find everything you need to know about outdoor cooking, but fire away about any questions or concerns, especially if you get stranded doing a search.

First off welcome Andy to SMF. You'll like it here cause there are abunch of good folks here that would just love to help you out with just about anything to do with smoking. We really like to have newbies here because they can bring in a new propective to how things are done. There's nothing like a new set of eyes to give and new way to make things that little differant to make things alittle better. So I hope you know about the Qview here.

It's also free and it will give you the basics of smoking. So after all of that you just need to go grab something to smoke and if you have any question just post them here and we will answer it quickly so you don't have any mishaps with your smoke.

Hi Mama's Smoke,

The brisket turned out okay... I hadn't flipped the charcoal trough over to use as a baffle yet, so there was too much direct heat assaulting the meat. In short, I think I overcooked it.

But hell, it was early feb. and I was so in the mood for some BBQ'd meat that it tasted great anyway.

I just opened my photobucket account, so there will be some Qview pics with my next post.
