I picked up a MES 40 at Sams club and plan on using it for processing the venison sausage / snack sticks I make, as well as the typical stuff.

I seasoned it last night and plan on trying some beer can chicken in it tomorrow.

First two items out of my smoker have been great, but not without trouble.

My MES40 doesn't seem to heat evenly, so it looks like I need to either raise the tray higher (using second to lowest rack now) or rotate the food.  Anything on the left side is about 20 degrees cooler.  The smoker is giving plenty of smoke and a great flavor.  Both the PID thermostat and probe thermostat are spot on for calibration.

I also learned to heat up sauce before you put it on, or it will really cool off the meat.

I did two chickens and one large meatloaf.  Both were excellent.

Hi, and welcome to SMF.

You have an excellent smoker... I love mine and do 

just about everything in it. I no longer use the wood chip

tray cause I have an AMNS & AMNPS. They both work great.

Happy Smokin' and don't forget the Q-view.
