I'm in my late 50's, in southern Nevada, about an hour from Las Vegas in the high desert.  I have been smoking some for a dozen years, mostly with charcoal, but recently purchased a propane.  I smoke mostly ribs, but enjoy fish, turkey, brisket, and of course pork shoulder.  I want to build a wooden cold smoker and do more bacon and long smoke hams.  I've read many times the different forums and decided to join.  Thanks for all the great ideas and advice provided.
