Just joined the forum a few days ago and I'm reading and learning a lot. I've always been a serious BBQ fan mainly grilling on my Webber during the summer because the old lady won't let me smoke my cigars in the house. So what better way to enjoy a nice cigar then out on the patio with a meat on the grill. A few years ago the old lady's dad had a ECB (love the sites acronym's!) sitting in the garage that he got from Marlboro points so he gave it to me knowing how much I like grilling. Well I didn't use it for a while and I finally got around to having some buddies over and realized I wasn't going to have time before the game to cook the 2 drunken chickens and all the ribs I got so I slapped that red cannon together and let er rip! I was a bit concerned on how then the metal was and that it wouldn't do a good job and I was right. Although I ended up with some serious ribs maintaining the temp and coals where a pain. I didn't have the luck of finding this site back then, but I was able to make a nice coal basket and add a vent to the top of the "red bullet" to get it working right. Well that was about 3 years ago and the thing is just about to fall apart after what has to be at least 100 good smokes.
Not sure if I'm going with a Char Griller or a large square vertical Brinkman just yet, but I got the ok to spend $300 on whatever I want so I'll be on the site trying to get feedback on what works.
I mainly smoke brisket, pork shoulder, ribs, and chicken using a steam water smoking brine, infused with fresh herbs from the garden.
