New to smoking

Hi all, I have just begun to try my hand at smoking meats. Today is my second time and I hope it goes better than my first. My smoker was a prize I won and I am certain now if I am going to keep on mastering my BBQ I will need a better one. It is a Brinkmann smoke'n grill. Vertical with a water pan. I just purchased a temp gauge because the one on the smoker says: warm/ideal/hot!!!! I did some ribs without an accurate gauge and they did not cook well at all though the flavor was good i could not get the meat tender. I have been making ribs indoors for years that my family loves. I have a really great spice rub down pat. Today I am trying 1/2 chicken a spatched with a rub recipe I found here. Wish me luck and thanks for all the great tips I have found here!

About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing

and you will probably get 10 replies with 11 different answers. That is because their
are so many different ways to make great Q We all have our own taste.

Yes this site is amazing I have been searching for tips for a long time here but now that I'm smoking and not using the oven I thought I should join.
 
Grrr, already having issues getting my temperature correct, it's too low there are no valves only a door and lid. I cracked open the door for flow but afraid I will lose flavor.
 
Welcome aboard!  You've found a great place for sharing ideas on smoking, grilling, curing, etc.  There are plenty of friendly, knowledgeable folks who really enjoy helping one another.  There is a charcoal forum where you can get some good tips for mods that'll make that Brinkmann a much easier rig to hold temps in.

Welcome to the forum. Like you, I had limited success with my first attempts at smoking. It wasn't until I found this forum that I started to enjoy smoking. Everyone is very helpful and there is a ton of information in the postings.

I would suggest you dive in and post some pictures and a description of your project and you will get lots of help, suggestions and new ideas.

Welcome for sure! The first couple of smokes can be a little nerve wracking to say the least. We have a new ECB (El Cheapo Brinkmann) Smokers group that I sent you an invite to join. There are quite a few long time ECB users and there are some great mods you can make to the Smoke N Grill that will have her smoking like a champ in no time. Welcome to SMF!
