New Smoker in NEFL

Howdy!  

Geoff from Jax, here.  I've been lurking around the site for a while and finally decided to step away from the wall.  I'm just starting out and have learned a lot from this site and YouTube. I got Jeff's book last month and have really enjoyed it.  Thanks to Jeff for the site and to everyone for the great content!

I got my smoker for Christmas last year and have used it about 6 or 7 times this year with mixed results.  My main problem has been temperature control.  

Smoker: Masterbuilt Pro Duel Fuel

Mods: Needle valve, Cast Iron Pan, Chunks instead of chips
