New smoker from Nebraska

Hello fellow smokers, I'm a rookie and just getting into smoking. I'm from Nebraska and just finishing up my last semester of college so I'm on a budget, however trying to build my first smoker (thread here: http://www.smokingmeatforums.com/t/268195/1st-smoker-build-300-gallon-reverse-flow). Excited to be a part of the forum and am looking for any guidance or help with my smoker build and anything else smoker related! The only actual cooking experience I have is on my Traeger, so I've got a lot of learning to do in the actual cooking department as well! Looking forward to sharing pictures of my build and conversing with others along the way!

Hello All, My Name is Eric, I am from Nebraska as well, and have been grilling and smoking for a few years now, not professionally yet, although thats what hope to be doing within the next year. I would LOVE to have my own food truck or smoking/ grilling restaurant, preferably food truck.i know those are traditionally called barbecue restaurants, but most of my stuff i dont use barbecue sauce on with the exception if a side(pork n beans) or 2, I just keep it on the side thst way people can ad the amount they want.) I guess i would call my style more of a "smokehouse" style for lack of better term.
The question I have is, what is the fastest and easiest way to get a food truck going in nebraska, especially when funds are very limited at the time but I need to get it going ASAP and get away from my current job( which is not the main reason but a big reason) the main reason is I LOVE to grill and smoke food and cook for others and i am best at grilling and smoking style as opposed to indoor style cooking, and when in that industry i see so much potential in being able to help people out as well.
my 2nd big question is what EXACTLY in common terms s are the laws for food trucks in nebraska. I keep getting tokd to go to our extension website and look, but they way they have it worded is SO confusing. So I woukd be grateful for any advice on thst as well. Thank you so much. I appreciate any advice.
