It isn't necessary to drill a hole. Just drop a remote probe through the exhaust vent. To keep the probe off the metal, use half a potato and poke the probe through the tater, leaving 2" or 3" of the end of the probe exposed.
Ok, you got some excellent tips. YOU MUST USE A REMOTE PROBE, to know what the inside cooking temp is! They are cheap $20, you can start with one but it is better to have two.
