I made sure I had all the ingredients for rubs/sauces, and have an overall plan. The only thing I'm trying to decide on, is the schedule:
  • Cook Friday taking all day, refrigerate overnight, and reheat and serve early afternoon on Saturday,
  • Start late Friday night, skip any spritzing, finish up Saturday morning, refrigerate, and reheat for early afternoon meal.
  • Start early (5am?) Saturday, cook, and eat immediately (possibly 7pm+, if things run long).
  • Start early Saturday, but use higher temp, to get a earlier finish time.
There are no guests, so flexible with cooking and eating times.
Go back and read the thread from civilsmoker civilsmoker ... it's a proven method on how to start in the morning, cook a pork butt, have time for it to rest, and have it for supper... or dinner, as some call it. Don't over think it... since you don't have any guests, it doesn't matter. Enjoy the process, don't stress over it.

We got 3 meals in the south, breakfast, dinner, and supper.
 
lol we are having some friends over on Saturday for breakfast at 6pm (yes PM)……ie so we don’t mess with family supper time…..

Just know that with the new PID pellet smokers, making very good BBQ at home with very simple and basic cooking techniques makes BBQ fun and relaxing…..I use virtually the same process for brisket but I use rendered beef tallow vs the finishing liquid ( the trimmed fat in a foil pan) ……it’s a life hack in my book……oh and I can sleep in or work in the shop with power tools smoking day cause I actually get good sleep…….

OK, I reworked the schedule plan to do what civilsmoker civilsmoker is doing for the Taco process so that the time is shorter, and will use the same finishing sauce (vs JJs).

The (small) variations are that I'll use are: light brown sugar vs raw sugar in the finishing sauce, no alterations of Jeff's original rub recipe, and I'll try towels and a cooler to rest (with a probe to ensure > 150 degrees), as my oven only goes down to 170 degrees.

I'll start at 5am Saturday.

OK, I reworked the schedule plan to do what civilsmoker civilsmoker is doing for the Taco process so that the time is shorter, and will use the same finishing sauce (vs JJs).

Sounds like a plan I would do (LOL)..... Oh and holding it at 170 for an hour or two isn't a deal killer either. It just depends on your kitchen space an such, if the oven makes things easier then that is what I would do. However, there has been and will continue to be countless PP held in the cooler with towels. It will hold a long time like that.

And actually, I'll be using the oven for baked beans and corn bread baking.

Excited to see how things come out with the pellet cooker!

There you go. Oh, and I haven't posted this before on holding but if an extended hold is needed if you happen the have a larger crock pot of turkey roaster, just transfer it into that and set it to low......bingo.
