Hello all. gotta say great forum with tons of helpful information. I'm mike from new jersey. I'm smoking with a horizontal offset firebox. Ive used a charbroil in the past. Just moved up to a bigger better model. Ive smoked a brisket and two butts so far. For new years I will be doing a 20lb ham and a 17 lbs turkey. Ive been reading the post here for tips. Its my first turkey and the biggest piece of pork I've done. It may take a day or two but ill get the qview. I'm not sure about the times but I'm cooking early so I should be OK. open to hearing all your thoughts Thanks to everyone who makes this site what it is!!!!
