New guy in Texas

  1. Hello everyone,

    Well first of all, I'm sitting here at work and can't wait to get home. I haven't smoked one thing yet as my smoker just arrived a few minutes ago. I purchased a Landmann 3405GLA. I decided to start off economically and hopefully something to efficiently control temperature. If this new found hobby stays interesting and exciting, I’ll invest further. I know absolutely nothing about smoking food but hope to learn from all the pros on this forum. I have been doing a lot of reading since I decided to venture into this new  hobby.

    Just a little about myself. I'm located in Central Texas, where we are at about 100 degrees right now. I love to fish, hunt, camp, and my favorite motorcycling. Other hobbies include amateur radio, air rifle target shooting, and now cooking. That's pretty much it, I'm going to jump into smoking foods very slowly so hopefully won't become disappointed with my product. I’m gonna be needing a lot of advice so thanks in advance.

    Mike,

     Welcome to SMF!

     i'm not familiar w/ the smoker you have but everyone here old timers to newbies are more than ready to help ya in any way we can. All ya have to do is ask . ( and show pics of your smokes)

     If i may be so bold as to recomend that you start off w/ something easy.

     If time is short try a meatloaf or brine up a couple a yard birds and smoke

     If ya got a lil bit a time go with a  slathered  and rubbed down pork butt.

     Butts are probably the most forgiving large piece of meat that you can smoke.

      If you go to the wiki section and look at emans pig rub it's a good starter slather and rub for any pork. It's a fairly sweet ,no salt combo that i came up with.

     If there's a seasoning or herb that you and the family like try adding it to the rub or if there's something in it you don't like take it out.

    Welcome Mike.  You have the right idea in starting slow.  Just take your time and don't worry if the first smoke or two don't turn out the way you were hoping.  Learning the temperments of your smoker will take a few tries in itself.  Don't forget to season that new toy of yours before you start cooking anything.

    Welcome there Chef to SMF. Now you'll like it here for there are alot of good folks here that would just love to help you with anything to do with smoking. Now you'll also find a whole boat load of info and recipes that are proven to be very tastey too. So go grab something to cook and iof you have any questions just ask.

    Thanks for the welcome. This site is full of information. I haven't had the opportunity to take the smoker out of the box yet, I hope to do so this evening. I read the articles on seasoning the smoker. Some say clean it really good first, then fire it up for a few hours, and finally oil it down real good after it cools. Another post says just oil it down and fire her up. Any advice on the best was to season it? I hope to get it ready for smoking this weekend and do my first smoke next weekend. Thanks for the help getting started.

    Most just spray the unit w/ some pam or wipe w/ oil and fire it up and let it burn .
     
  14. Hey Texas, Welcome (Says the Newbie to the Newbie) I have been on here for a few days and the info is great. You will be suprised how easy and tasty your first few smokes will be. I just started this spring and I already upgraded to a bigger smoker. [​IMG]  Happy Smoking!!!
