new guy here

this is my introduction so to speak... Name is Mark. i live in Winston-salem, North Carolina. i live here with my wife and 2 daughters. My screen name is from my favorite celtic band, Albannach. Scottish bagpipes and war drums.. killer stuff!!!

Been smoking over a year now. i started with this old Cajun Cooker bullet style smoker. My father won it at a company x-mss party 15 years ago and it sat in his garage un-opened that long till he gave it to me.. it worked good but i quickly out grew it. i now use a Smoke Hollow Pro Series 44" smoker. Its gas and works great. Taking a little time to get used to the temp being dialed in, I'm used to stoking fire the whole time so now my cooking times have changed. but I'm figuring it out. I'm more of a beef guy. but I've done several pork and chicken smokes. 

I joined here just to learn new tricks and tips and to interact with folks that have same passion for cooking as i do.
