Just signed up and looking forward to learning a lot from everyone. I own a El Cheapo Brinkmann that I bought for $10 at a yard sale a few years ago. So far, I have only used it to do beef and turkey jerky, but have had some amazing results. I modified the ECB almost immediately to raise the lower rack so I could hang jerky from both racks using bamboo skewers. I very much enjoy the creativity in making the marinades because the sky is the limit regarding styles and taste. My favorite part is the 8 hours tending to the smoker....yes, essential equipment include a comfy lawn chair, cooler full of favorite beer, radio, a good book, and the tailgate of my truck as a work station. Can't wait to try some serious cuts of meat with the knowledge I'm gaining from the website and forum. Glad to be part of it all!
