Hey everybody!
New guy from NJ here. Spent a lot of years on grills but always wanted to try my hand at smoking. Now that I'm in a more smoke-friendly neighborhood I'm kicking it off this summer.
At the end of last season I bought a Char-Broil American 300 (I know it's not optimal but I wanted to start off easy before buying a bigger setup) and after some metalwork and small modifications it's good to go.
There's a TON of information on here! Thanks to you all for posting it up.
