Hello everyone!  I received a MES 30 for my birthday a week ago and I'm super excited to get started!  I have done the initial seasoning on it and have a butt all ready to go tomorrow for some pulled pork.  

I'm new to smoking so I have been combing the forums - what a great resource this place is!  I've already found some great recipes that I want to try out, and I really appreciate the step by step guides.

I'll check in after my first smoke tomorrow with pics!

Welcome to SMF and congrats on the new smoker. You can post your smoke tomorrow while it's in progress too. I'm doing a pork shoulder tomorrow as well for PP! Thanks for sharing!

You're lucky, I got my first smoker a few decades before the internet and my first Butt was too smoky and raw in the middle. I cut it in half and put it in the over for a few hours to salvage it, but it was a long time before I tried smoking again.

Even with all of the help you get here, the potential to screw up still exists. If your first smoke isn't dazzling don't be discouraged. It really is the best way to cook meat, you just have to keep plugging away until you figure it out.
 
Thanks for the welcome guys.  First smoke turned out great - timing was off just a tiny bit and we ate dinner about an hour and half later than we were planning, but it was worth the wait!  I did notice that the temp setting on the MES was reading about 15 degrees higher than what I was getting on my Maverick, so that'll be something to watch for.

The wife requested ribs next weekend, so I'd better start reading up on that!
