Just introducing myself.
My daughters & I are strictly wood people.
We grill & smoke with nothing but wood.
I've been using a horizontal smoker for over 20 years.
My current project is making home made Spam.I have a daughter that loves the stuff & it's kind of pricey at $2.64 for 12 ounces.
Found this site when I was trying to find a way around using Tender Quick in the recipe.
Can't find any within 50 miles, & I'm not willing to shell out $10.00 + shipping & tax. That would be roughly $17.00 for 2 lbs of Tender Quick.

I use cure #1, it takes 1 tsp to cure 5# of meat.

I buy it in 5# Jars & it costs $17. 5# will last for years.
