Got up today at 4:45am and started our smoker, got it up to 325 loaded it with cherry wood and a 12lb. turkey. At 6:30 I sprayed with apple juice and at 8:30 it was done. Injected with DJDebi's recipe last night and going to make Monstah's Kielbasa Dip today. Thanks to everyone for a great site and all ya'lls help. Hope everyone has a great Thanksgiving day.
