Mrs. Thunderdome and I spent Thanksgiving day at home together this year. We made a full meal for just us two, so we’re gonna be leftover’d all week.

Here’s the pics:

I bought a 9 lbs Turkey breast, and brined it overnight. This stuff smelled great as it cooked.

Used a brining bag. This thing was huge. I think I could have done up to a 20 lbs bird in it.

Out of the bag, and rinsed thoroughly. Seasoned with Creole seasoning and Plowboys Yardbird Rub

Here it is after almost 6 hours in the UDS. I used Hickory briquettes, with some Peach wood chunks for smoke. Cooked between 250 and 275. Since I had the bacon over it the whole time, I thew it in the oven @ 450 for ten mins so one side would have crisp skin. The other side I took the skin off (for sandwiches and leftovers)

You can see the smoke it took on through the bacon. The pink smoke ring went about 3/4 of an inch into the breast meat

Here is my plate…maxxed out. Had to reinforce w/ a second plate #fat

The Mrs made green bean casserole, stuffing, mashed potatoes, and heated up some dinner rolls. I was miserable. Then I had pumpkin pie. #fat+chunky

Now the bird looks awesome and I know it tasted really good to. I wish I had a great turkey dinner that looked like yours did. I had the bits and pieces that I grabbed while carving for my dinner. It's all good thou.
