Does anyone cover their turkey while smoking?
I just covered my bird about 20 min ago. If you feel that the skin is getting close to where you like it I would suggest putting some loose foil over it but no need to wrap it. 

My birds sitting at 150 and plan on pulling at 165 in the breast.

I smoke the bird uncovered till the breast hits 165 IT. I then set it on the counter covered with foil for about 45 min. This helps redistribute the juices.  Then I carve the bird. b

​Did you apply a rub before leaving it rest in the fridge over night or is it better to apply rub right before smoking?

I care more about flavor then crispy skin so i apply the rub and then the bird rests in the fridge overnight.
