My first smoked turkey turned out fantastic! even though I forget two steps.
The first thing I forgot was to rinse the bird after brining, I drain him real good than patted him dry inside and out The second thing I forgot was to put the maple syrup and butter on it towards the end, but it still came out fantastic. It wasnt salty at all and the skin was a sweet golden brown, I have a pic ill load up later prolly about 4 hrs into the smoke. The meat wasnt moist. It was sopping wet the only time Ive seen turkey breast that wet was from a fried turkey, I was amazed and so was everyone else.

my sister baked one cause her daughter wanted a traditonal one. my bird was all bones (when all the meat was gone people actualy picked at the carcass) while hers had 1 leg missing, which was depressing this morning when I wanted leftovers. :( so next time I'll do 2 birds and wont forget the maple butter galze.
