Well I had a bunch of things I wanted to try after I got my smoker going and I was down to sausage & beef ribs this week. Sausage was so so, but I just used some store bought ones, I think if I made my own it would be better. I threw some chicken legs... just because there was space.

Used just a little bit of rib rub and I tried one 1 of my 16 bags of Original Charcoal Company Rancher. (I wiped out my Home Depot) I was actually impressed, it gave a nice flavor and burned hotter longer than the BBQ Galore Lump I had been using. I smoked with hickory & mesquite @ 225. I thought I was going to do 3-1-1 w/ the ribs, but well... I went watch an episode of Entourage in the afternoon and fell asleep. So it was more like... 4-1-0. hahah. I smoked the crap out of them and they were DELICIOUS! Esp. w/ that Rudy's BBQ Sauce my friend brought over.

Very good looking. I am doing more beef rib to as of late. Found some pretty good deals on them but always get the individual beef boned ribs as they are much more meaty than the racks around here.
