My Father's Day Smoke

Good old U-S-of-A
Gearing up for a big pool-side bash on Saturday with all of our friends and I have been commissioned to do the Q. I had a 5# brisket in the freeze that I set out on Monday. Today when I got home and reached for a beer I saw, to my surprise, two wonder looking butts (pork, not human!) for a combined weight of 14#. One of my buddies dropped them off. So tonight I made up a double batch of Jeff's rub and rubbed everything down. I will put them on the smoker late tomorrow night and let them smoke over night. I'll also be doing some of Dutch's beans, a couple fatties, and some ABTs. I'll be sure to post some q-views as things progress. Here is one of the meat with rub. Sorry for the blurry picture.

To answer someone's question, I did use Jeff's rub on the brisket too. I actually makes Jeff's rub and then add a couple of my own "secret" ingredients.

Here is the meat going into the smoker @ 230 degrees. I'll get up around 2:30am to spray everything down with apple juice. I'm using apple with a bit of hickory and some small pieces of lump coal. I'll keep the qviews coming, don't worry!

Here is a peak at 2:30am. My dear Lord it smells good out there. I'm reminded yet again why I'm willing to get up at 2:30am to do this. I LOVE BBQ!!!

Its 8:00 and we are coming along just fine. The smallest butt hit 170, so it is wrapped up in foil. I'll pull it off when it hits 200. The biggest butt and the brisket have plateau'd at 160 and 156. I'll wait until the butt hits 170 and the brisket hits 160 and then wrap them up as well.

I think it is now time for some coffee and some breakfast. Had I been thinking I would have put on a fatty around 5:00 to have with some fried eggs :(
