Had a craving for some red meat. Saw a lot of chuckles being cooked so I had to give it a swing. Kroger had a great deal...$21 chuckie for $9 with my card. So boom! Decision made.

Cooked it at 225degrees til it stalled out around 165degrees. Wrapped in foil then and pulled at 205degrees.
what to have with it....? Saw kilo charlie kilo charlie hashbrowns with the crawfish and went “hmmmm...” I had smoked some brats earlier for lunch while the chuckie was cooking so I did my hash browns with them and omitted the crawfish. Turned out great.

Very nice meal! I need to do more chuckies sliced instead if pulled. They really do have great flavor! Love the sides too! Im gonna have to try and find that beer and give it a shot.

Looks Great, Jim!!!
Nice Job!
Taking it to 205°, I would have thought you'd be pulling it, instead of slicing.
It usually falls apart at 205° for me.
