Just wanted to let all of ya'll know that I like smoked meats, but I have just found my real love which is smoked vegetables!!! Geoff was gone on an airline trip, when I found these vegetables in the fridge he had prepared which tasted really awesome! So I asked him, "what did you do to those veggies to make them taste so good? Those were the best vegetables I have ever had!" He replied "I smoked them." So now I have another reason to encourage his new found hobby - more smoked veggies for me!

I also wanted to let those who were in Grand Rapids for the barbeque competition know that I had a great time, and enjoyed meeting everyone. Thanks for making Geoff and I feel welcome! Laura
 
Glad you found your joy! Mrs. Meowey loves anything that comes out of the smoker. A while back I did smoked stuffed green bell peppers. You might suggest that to the Crewdawg.

Your Hubby has inspired me to do some veggies for my wife, she loves veggies. Don't brag on him to much, we won't be able to live with him

Nice to hear from you. My name is Debi. I am kind of the forum Mama. This as a friendly lot and quite a nice family. Please come visit us often. Have you tried smoked stuffed peppers yet? Squash? Corn? They are awsome! Even baked good are fabulas on the smoker, especially corn bread and fruit cobblers! Yummm! Enjoy!

It was nice to meet you in Grand Rapids.

Geoff and I sat in on a seminar and they had smoked veggies there and so he may have gotten the idea from that class. So you should make sure to let him go to as many competitions that he can attend, you never know what he will learn and be able to make for you
 
So how about a recipe? Do you do anything special to the veggies before your smoke them? How long and at what temp? My girlfriend loves veggies too and thinks I spend too much time with my smoker, this may help!
 
For the recipe it was a store bought private label that they were selling.

They used a Big Green Egg and used a BBQ pan inside it (I will try to get a picture of one).

They placed it on there for maybe 20 minutes at 200

So nothing special just good eaten
 
Blackhawk I think I might know where you can get one pretty cheap if you don't mind driving to MI to pick it up... Don't mind the people that will be yelling at you... they're crazy from too much baseball
