The best part of Mother's Day is that my wife gives me permission to smoke. This year I am thinking about going all out. Going to try some pulled pork (I say try because I have yet to get one right, but they still come out good), a rack of ribs, and fatty with a bacon weave.

I have never done a bacon weave before, but hey, it's Mother's Day! I will bring the qviews next week. If anyone has some suggestions, I am all ears.
 
Pulled pork ~ smoke til it reaches 165 , foil and take it to 200 degrees up to 205 degrees .. this could take up to 17 hours at 225 on a smoker . use a temop gauage of some kind for perfect results each time . Try and roll the ribs and tie them with twine ~ then stuff the center bell pepperes for inhanced flavor .
 
Ribs wrapped around bell peppers....now that sounds good!
