missus teacup's chicken Quesadilla - with pics

well the missus had an a great idea last night, she wanted some leftovers but in a different way....this recipe is for 2 quesadillas

Missus Teacup's Chicken Quesadilla's

4 sundried tomato torillias (plain will do)
1 leftover smoked chicken breast(i like dark but you know..lol)
nacho & taco cheese mixture
salsa
sour cream
cooking spray

lay a tortilla on a plate(plate should be a little bit bigger than frying pan - will explain later)
sprinkle some cheese on the tortilla
shred some smoked chicken onto cheese
spoon some salsa onto the mixture
sprinkle some more cheese on the top
lay another tortilla on top


spray cooking spray into frying pan, turn heat on as low as you can.fry until golden brown, like you would a grilled cheese...

when quesadilla is ready to flip, place plate onto top of frying pan, give it a flip so it is now on plate...slide it back into frying pan...



when you are done...this is what it looks like....serve with sour cream and maybe a little cilantro..Enjoy

We do this alot with leftover pulled pork and smoked chicken (the best). Makes for an easy and quick weekday dinner. Don't forget the home made guacamole this time of year if you like it!!
