I just threw together some awesome burgers! (sorry they went too fast for pix...I gotta get a kitchen cam) Here's the recipe using 1# of beef, multiply as needed.

1# Ground beef (80% or less)
1/2 minced onion
4 slices of bacon fried crispy and crumbled
2 t celery salt
4 slices of your favorite cheese (I used Irish Cheddar)

Combine the first 4 ingredients in a bowl and mash together with your favorite mashing tool. Seperate meat into quarters, and working with each quarter, divide it in half and form 2 thin patties, place the cheese on top of one of the patties and top with the other and form to desired size making sure to get a good seal all around so the cheese doesnt ooze. Grill to prefrence and serve!

I had the best of intentions of putting some garlic in here but I kinda forgot...Thats what I get for cooking by the seat of my pants.

Again I'm sorry there were no pics, but these burgers made my wife think twice about buying more prefab patties.

Cool idea to put the cheese in the middle like that. Why didn't you post this before I made my hamburgers the same 'ol boring way tonite?

I'll have to try this next time. I toasted my buns on the grill though, maybe that will get me a few style points.

Oh yeah, I toasted my buns too, 5-10 seconds on direct high heat leaves a nice crust and the top is nice and fluffy like it was never touched.

Of course I used lots of butter too, gotta have butter.

oooh never thought of cheddar jap buns...best I can do around here w/o baking it myself is a nice onion roll.

That sounds great, I'm going to try that this weekend and smoke them instead of grilling. Think I'll try the same thing with JD instead of burger, and shoot for a Fatty Burger!

Heh, My wife couldn't get enough of the burgers last night so she asked me to do em again tonight, I think I'm gonna make a couple modifications to the recipe though. More bacon (maybe 6 slices to a #) and then I'll sweat the onions in the bacon fat. I'll try not to forget the garlic and instead of just slicing the cheese I'm gonna shred it to make it easier to wrap the meat around.

A slice of Vidalia onion placed on top just before you place in smoker adds a lot to them, Too.

Thanks for the recipe Brennan! I had some friends come by at the last minute... no time to get the ribs on, so I had an excuse to try your burgers. Wow they were great!
