It's time for my annual Roasted Green Chile Fest! I got hooked on roasted green chiles when I lived in Colorado and the farmers market was fulled with the aroma from the large chile roasters. You could buy a 1 gal freezer bag of roasted chiles for five bucks! Since I moved to Montana, I grow my own chiles and supplement them with some from the farmers market here if I can find them. The picture is a portion of the green chiles I did. These are roasted and peeled! I usually throw a pork butt in the slow cooker on this weekend to make shredded pork burritos and pork and green chile sauce. This year I threw a butt in the smoker and it and a whole new dimension to this years fest! You maybe thinking that the butt in the picture is burnt, but I used a Mexican Mojo spice rub. A traditional mojo sauce has cocoa powder in it and so the pork butt is a dark red mahogany from the cocoa and the red chili powder. So last night's feast included, shredded smoked pork on fresh handmade flour tortillas, with chedder cheese, roasted green chilie and carmalized onion Rajas and sliced avacados. Served with Cilantro Lime Salsa Fresca and chips and a batch of Sangria!!!!! Another Great Roasted Green Chile Fest!!!!!
