MES maximum temperature.

    Does anyone know the reason for the MES maximum temperature setting of 275?

    The reason I am curious is because I have a PID with its own power relay that I want to attach straight to the 800W element in my MES.  Since my PID temperature controller doesn't have the input limitation of 275 (and it has it's own thermocouple so it won't need to use the one built onto the cabinet), I'm thinking that it can go higher. 

    My concern is if the maximum temperature of 275 is because the smoker itself will warp, or the door gasket will melt / fail.

    Just a wild guess ,it's because most smoke between 200 to 250

     I've only gone to 275 when doing cabbage and chickens on mine

    only because to get a crisper skin on the chicken and the cabbage wrapped

    in foil is basically just steaming everything else has been 225...low and slow

    The only thing that I was considering is if I ever put a big turkey in there which needed a little extra help getting done.

    It does make you wonder that maybe they don't want it to go any higher than 275˚. Could hurt something???

    Could also be that if they make it read up to 300˚, and the element isn't able to get it that high, we'd be calling and complaining that it won't get there, and why did you make it read up to 300˚, if it can't get there??

    Others have attempted to add more heat and had issues with buckling inside the MES.  I think you would be safe to 300-325, but don't go off my input, you need to run some tests, first at 300, for 4 hours, then go higher.    325 you can cook just about anything.

    Sort of reminds me of a few old cars I used to have. The speedometers went up to 120 but most of them never saw 110, let alone 120. I did have a Volkswagen Beetle that could bury the 90 mph speedo, but it was supercharged. I blew it up - go figure.

    Yup, some were the opposite.

    I followed my brother home one time when we were young and stupid. We hit a straightaway with both of our needles buried. Took more than a mile of coasting up a slight grade to get them back within speedometer range, without hitting the brakes.  Don't bother---I told you I know it was stupid![​IMG]
