ah finally got my password fixed

what's the Memorial Day cookout plan ?

Here's mine

Got 10 pounds of pork loin ready to go into the smoker early tomorrow,  Smoking with apple wood, meat rubbed with Jalokia pepper rub, and injected with apple juice. should take about 10-12 hours, and 5 bottles of Bob Gibson's Championship red sauce, for the BBQ. A nice big cigar and a load of beer to get me through the day.
 
im thinking this weekend I will do ribs maybe a brisket and probably some chicken pieces. got a new to me pit so I got to learn how to use it now

Picked up a Prime Grade Packer this morning at the local Costco for this Memorial Day weekend. Couldn't believe the price, $3.39/lb. Should have bought ten, but my freezer is full. Saturday morning fire up the WSM, dry rub ala Franklin, take it to 160 with white oak, wrap in butcher paper, then take it to 180, flash cool in a cooler between two bags of ice. Sleep 8 hours with the Maverick turned off. Sunday morning finish in the oven at 350. Rest 1-2 hrs, slice and eat. Dinner at noon. Will this work? Sunday dinner is dependent on it working. Beef ribs, some cuban style pulled pork for cuban sandwiches.  Grilling up some souvlaki marinated wings with tzatziki, turkey burgers, hot dogs, steak and chicken fajitas, dutch's wicked baked beans and a bunch of other stuff I can't think of.  I have a big family to feed!
 
Special family gathering today. I'm doing two tri-tips, two pork tenderloins and 10 or 12 sausages. Hoping to dodge the raindrops!
