good morning fellow smokers..doing a beef fatty here today it has been a while and it's a monster, over 7# loaded with onion, garlic some green pepper and some extra rib rub i had laying around.. gonna smoke it with birch and apple splits and spritz with apple cider then in the last hour i will glaze it with some maple syrup and butter with a touch of black strap mollasses. will keep you posted and up to date on the progress of this behemoth
