Made that at work last year and it was a huge hit. Was a pain to feed the whole shop but well worth it. Don't forget my number!!!!!!!!!!!!!!!!!
 
nice looking balls....love me meatball sandwiches since a kid in NYC. love the sauce drool down the arm. Suggest trying it with motz or provolone cheese and pop under the broiler for a few seconds to melt.

Those meat balls looked great. How long di you smoke them and to what internal temp?

I didn't go by time, I smoked them at 250º till an IT of 155º

It was about 1½ hrs, But your smoke time will vary with temp fluctuations.
 
 
This looks like a great time for us to rattle Chef Jimmy's cage.  I haven't done that for a while, and I love to do it.  I think he knows how much I respect him.  If he doesn't by now, he certainly should!  LOL

We don't always have the time or energy to do ALL things from scratch, even though we would like to.

I quite often put a lot of energy into something and take a pass on a side.  We don't all get to prepare things in the ideal world.

I have high respect from some of the "old time" cooks, and JJ brings great things to this forum, too.

Those sandwiches looked great.  I would certainly eat one. Pass me a plate, please?
