Seasoned the new smoker yesterday, rubbed up a rack of ribs today and tossed them in at 12:15.

It took exactly six hours at 225 to get the ribs just where I wanted them. This is one of the best racks I’ve ever smoked. I followed the recommendations on the amount of wood and I will increase the amount of wood next time around for a bit more smoke flavor. Tomorrow is a batch of snack sticks.

Also like the way the grate system is designed.

All I'm thinking now is that I wish my leftover pizza was a rack of delicious ribs like the ones in your pics. I'm going to be Jones'n for ribs for days now. Thanks :)
