Used a couple of pork butts, which I butterflied. I rubbed them down with TQ and brown sugar. Cured them for 11 days, and then rinsed overnight, changing the water twice. Smoked with hickory. Turned out really well!
Also, made some PP, but only got the one pic! I was more concerned with the bacon
