Put a 9# bone-in pork butt in a brine late yesterday afternoon. Got up this morning, remove the butt, added some homemade rub and into the smoker at 6:45 set to 210º. Made some coffee to enjoy along with a small bowl of blueberries. After an hour bumped it to 255º. The MAK is doing its thing, the air smells great.

Doesn't get much better 😎.

It was a simple basic smoke. Went for 6.5 hrs in smoke, then 2.5 hrs in a 300º+ oven dbl wrapped in foil followed by a 2 hour rest in a cooler. We had the daughter & son-in-law over to help unload 13 round hay bails for the wife's horses and put them up in the barn for storage so the butt and a large tray of stouffer's mac & cheese fed everybody afterwards. Of course they also brought the grandkids 3-7-9 which are always a bonus.

Reads like a nice day of Americana. I like it!...except the getting up early, the horses and the hay!
For the most part the horses are her's to deal with. Not something I care to be involved with except when she asks for specific help which I oblige in order to keep things real around here.
