Hello all ....I have been wanting to do smoked salmon since before joining this site ....so today I dry brined 4 # salmon fillets ( in fish section ) and also did 2 racks babybacks 3-2-1 style ,along with a 10 # meatloaf ( I get my burger cheap ) and some twice smoked tators ,mashed with green onions,sour cream , grated cheddar and topped with grated cheddar and then resmoked ....and for a side sauteed asparagus topped with grated cheddar and parmesan cheeses......here's some pics....
