His truck.

After having lunch with the laywer on the other side of town I made a turn on a street that I guess in 12 years I never passed before and I spotted this rig in a strip mall at a major intersection. He has been doing this since 1972. He is open 6 days a week and starts at 7 AM and closes at 6 PM. It was 3 PM and he was sold out for another hour. He uses oak, that was all I could find out as he was talking with someone in the truck and didn't want to bother him anymore.

I was going to post individual photos but couldn't figure how to get all the photos to my album at one time. I did have this option though. This is a slide show and you can play back at different speeds.

It smelled yummy.

It was interesting to see a guy making money with not a huge investement of a restaurant and overhead and labor.

It is a long day, but you also have to figure he chooses to do that. I have to take 10 days off this coming year and the next without pay. I am planning on getting my vendors license and taking my smoker and going to to a busy corner around lunch time. We will see if that happens for sure, but the corner I am eye-balling is very busy at lunch and it might work. It will at least be better then the crap the people will get at any of the fast food restaurants that are there. I'll keep you posted on that one.
 
I forgot to mention he does his briskets at 350' for 4 hours. Hmm.
 
Seems kind of high on the temp for the brisket. The food looked good though. He must be doing something right if he's been there since 1972.

You know the ol' saying; "nothing ventured, nothing gained" Just goes to show the dedication to what he's doing. Since I'm sure he's not rollin' in dead presidents, it must be his love of serving up a quality product. Ron, it's too bad you didn't sample his wares. Would have been interesting your review of his food. Thanks for sharing that.
