That kimchi looks properly soured too. I love kimchi but not fresh made. I buy a quart at a time, let it sit at room temp for 1-5 days until it starts to get bubbles and in the fridge for at least a month before eating it!
I used to make it but never got it as good as a couple of the Asian markets here.
