Had some nice plate ribs catch my eye at Costco last week so they came home for a party!!!

I’ve been having fun dry brining so for these I made cuts through the top fat to allow the salt to distribute throughout….i did fill it full of salt….

I’ve been experimenting with a new beef rub…..still working on the portions but it’s getting there!

This has no salt and is powdered butter based

On the RT 1250 at 265!

I normally wrap these but with the cold I suspect the burner was working overtime so they didn’t stall so I just let them roll to a INT 200 and giggly!

I covered them and held in the oven at 145 for 45 mins till dinner time approached…..they are ready to glaze now!

I glazed them in the home oven at 450 convection roast, brushed the coats after each coat was tacky……

I also brushed the bone for color and taste! Really happy!!!!

Plated it with some deluxe box mac, my wife’s lemon golden balsamic pin nut salad and garlic toast!

Thanks jcam, and I got the 5 spice tone from a local catering bbq chef. I used this combo on my last brisket point as well. I’m still working out the portions but will post it once I get it dialed in! It’s gonna be a keeper!

Thanks David! I have found that a 450 convection roast setting works 3 times better at setting a glaze than a broil setting. It makes it more uniform!

CS, Nice post, great rub and good looking plate, you got me going down another rabbit hole as I have never heard of butter powder !

Much appreciated CM! The powdered butter rabbit hole is a good one to go down……. I picked up on it after using kinders rubs as they have it in many of them. You can usually find it in the bulk food section or emergency food sections of the GS. I add it to many of my own rubs and also add it to the original Jeff’s bbq rub as well.
Yes I get that, instead of just scorching the top and maybe burn the glaze with the broiler.

Thinks Keith! Lots of Asian style 5 spice rubs out there for beef/brisket and it is a keeping at our house!
