Had some nice plate ribs catch my eye at Costco last week so they came home for a party!!!
I’ve been having fun dry brining so for these I made cuts through the top fat to allow the salt to distribute throughout….i did fill it full of salt….
These baby’s had some nice marbling!

I’ve been experimenting with a new beef rub…..still working on the portions but it’s getting there!
This has no salt and is powdered butter based
On the RT 1250 at 265!
I normally wrap these but with the cold I suspect the burner was working overtime so they didn’t stall so I just let them roll to a INT 200 and giggly!
I covered them and held in the oven at 145 for 45 mins till dinner time approached…..they are ready to glaze now!
I glazed them in the home oven at 450 convection roast, brushed the coats after each coat was tacky……
Oh man the crust!!!
I also brushed the bone for color and taste! Really happy!!!!
Plated it with some deluxe box mac, my wife’s lemon golden balsamic pin nut salad and garlic toast!
