Keto Chicken Enchilada Casserole

You just cant beat those Sam's chickens. I dont think I've ever weighed the net weight after picking them but they are larger than most grocery stores. I also use the carcasses for making broth...and some of the meat if I'm in the mood for chicken soup.

That enchilada casserole HAD to be tasty. I made enchiladas with low carb tortillas once and didn't like the texture. My wife said she didn't recall not liking anything about them. It's that time of year and time to try again! Thanks for the inspiration.
Thanks! I didn't do it this time but try lightly toasting the the tortillas. Can make for a better texture.

I was at Sam's Club yesterday and couldn't pass up on a couple of $5 rotisserie chickens. Picked them clean and cubed up all the meat with no firm plan on what I was going to make. This morning I considered quesadillas, chicken salad , several soups and popper casserole before I settled in trying some enchiladas. After glancing at a few recipes it was wing it time. I didn't take pics of the filling. Generally for the filling I tossed the chicken with 2 packets of fiesta ranch mix, added 2 large onions rough chopped and caramelized in butter, 1 1/2 cups minors chicken broth, 1 cup heavy cream, 4 small cans of green chilies and 24 oz of a shredded Mexican 4 cheese blend. Simmered it all and finished by thinking with 1T xanthan gum. Once cooled it all got wrapped in Mission zero carb tortillas. Yielded 28 total.View attachment 708320View attachment 708321 Sauce was 1 1/2 cups chicken broth, 32 oz Members Mark white cheese sauce, 16 oz sour cream and 4 small cans of green chilies. Heated in a sauce pan and whished until smooth, 1/2 - 1t xanthan to thicken then poured over the wrapped enchiladas. View attachment 708327 Nothing fancy and winged the recipe with mostly on hand ingredients but it turned out great. Very rich. I delivered some to three groups of friends /family who raced about it. I was thinking the same thing and it reminded me of my ex and ex MIL who always fried the tortillas before rolling them. Always a quick shallow fry in a pan with oil just till they start to bubble.

I dont know about smoked, but its definitely a thing with the cream cheese.

I considered putting cream cheese in my filling mix , would likely thicken it in lieu of the xanthan gum

That looks great! But I'll have to forgo the store bought tortillas........they have seed oils in them. Can't really find one that does not have seed oils. And after all I have learned about how bad seed oils are for the body, I will NEVER eat it again. Definitely not a brag, but I got straight A's in Organic Chemistry in College. Even got a letter of recommendation from the professor; one of the best (and hardest) Organic Chemistry professors at any University at the time...and he did not just hand out those letters either. I mention that only to highlight that I understand the sometimes archaic chemical equations used to explain the oxidation reactions that happen when seed oils are heated. Poly Unsaturated fats in seed oils are HIGHLY unstable and when heated create toxic oxidation chain reactions too numerous to count....but it is on par with the toxins in cigarettes....and cause the same exact oxidation in the body.....

....rant over.....sorry for the hi-jack. I'll be making homemade tortillas with STABLE Saturated fat.....rendered lard and trying this recipe for sure!!

I love me some enchilada but I normally don't get overly creative, just use the canned sauces along with shredded cheese and cream cheese but I need to remedy that soon. Got a bunch of wild turkey and pheasant that needs to get used and think enchilada and white chili would be great uses.

.Just made up 36 of these. Recipe as written actually does 36 not 28. I had used some of the chicken for something else last time in retrospect. Large pan is for family Christmas and doggie bags. Small pans are Christmas presents for friends. I'm making the sauce later. I'll sauce , add cheese and bake them all tomorrow. I also whipped up a big batch of my keto charro beans. Man I forgot how good they are!
