I was at Sam's Club yesterday and couldn't pass up on a couple of $5 rotisserie chickens. Picked them clean and cubed up all the meat with no firm plan on what I was going to make. This morning I considered quesadillas, chicken salad , several soups and popper casserole before I settled in trying some enchiladas. After glancing at a few recipes it was wing it time. I didn't take pics of the filling. Generally for the filling I tossed the chicken with 2 packets of fiesta ranch mix, added 2 large onions rough chopped and caramelized in butter, 1 1/2 cups minors chicken broth, 1 cup heavy cream, 4 small cans of green chilies and 24 oz of a shredded Mexican 4 cheese blend. Simmered it all and finished by thinking with 1T xanthan gum. Once cooled it all got wrapped in Mission zero carb tortillas. Yielded 28 total.

View attachment 708327 Nothing fancy and winged the recipe with mostly on hand ingredients but it turned out great. Very rich. I delivered some to three groups of friends /family who raced about it. I'll be cleaning the recipe up and adding to my recipe book. Thanks for looking!!
