Kansas City cut spares?

KC cut are only the Spares trimmed of the part with Cartilage in it... to smoke them , well you'll have a bunch of ways suggested , as for me... I rub them with my mix and on to the Smoker for appox. 5.5hrs.(no foil) and do the bend test and poke for

tenderness . I then remove ,rest and eat as soon as possible for that good fresh taste... IMHO , Ribs are best that way  :

Yeah, Kansas City is just another way of saying St. Louis cut, which means cutting off the tips and having a uniform spare rib
